Iberico Shoulder: 100% Bellota and 50% Cebo Paleta
Iberico shoulder, known in Spain as paleta Ibérica, offers a more compact way to enjoy the distinctive flavor and marbling of Iberico ham. Smaller than a whole hind leg and known for its concentrated flavor, our paleta is made and cured in Spain and available in the USA as 100% Iberico Bellota and 50% Iberico Cebo.
What Is an Iberico Shoulder, and Where Does It Come From?
An Iberico shoulder, known in Spain as paleta Ibérica, comes from the front leg of the Iberian pig. Jamón comes from the larger hind leg.
That difference in anatomy affects the size, curing time, fat distribution, texture and flavor of the finished product. A paleta is not a smaller or lesser version of Iberico ham: it is a different cut with its own flavor, texture and fat distribution.
Its smaller size and more concentrated flavor also make it a natural way to discover Iberico in the USA.
Iberico Shoulder or Iberico Ham: Which One Should You Buy?
Both come from the Iberian pig and follow the same regulated Spanish classifications, but the size, yield, flavor and carving experience are different.
The right choice depends on how much ham you want, how quickly you expect to enjoy it and the flavor profile you prefer.
Size, Weight and What You Get From the Piece
The shoulder is smaller than the hind leg, making a whole bone-in Iberico shoulder easier to manage when you want the traditional carving experience without committing to a full-size jamón.
Because of its anatomy, the shoulder also has a higher proportion of bone relative to usable meat than a whole ham. That matters when comparing price and yield, but it is only one part of the decision.
Fat, Flavor and Texture
The smaller muscle structure of the shoulder and the way its fat is distributed give paleta its distinctive flavor and texture. Its marbling can be more pronounced across a smaller amount of muscle, contributing to greater intensity and a slightly firmer bite.
Fat is an essential part of Iberico, not simply something to remove.
How Long It Lasts Once You Start It
The smaller size of a paleta makes it easier to enjoy the whole piece over a shorter period. For households that want the traditional bone-in experience without committing to a full hind leg, an Iberico shoulder can be a practical choice.
Types of Iberico Shoulder Available Online
We offer two Iberico categories in the United States: 100% Iberico Bellota and 50% Iberico Cebo.
Paleta de Bellota 100% Ibérica
Paleta de Bellota 100% Ibérica comes from purebred Iberian pigs and combines the concentrated flavor and distinctive texture of the shoulder with acorn feeding during the montanera season.
50% Iberico Shoulder, Grain-Fed (Cebo)
Our 50% Iberico Cebo shoulder comes from pigs with 50% Iberico genetics and is grain-fed.
It offers a different profile from 100% Iberico Bellota while retaining the characteristic marbling and savory intensity of paleta.
How Long Is an Iberico Shoulder Cured?
An Iberico shoulder generally requires less curing time than a full Iberico ham because the foreleg has less mass than the hind leg.
Our Paleta Ibérica de Bellota is cured for over 24 months in natural cellars, giving the piece time to gradually develop its aroma, flavor and texture.
As with our hams, curing is not simply about reaching a number of months. Each piece needs time to develop before it is ready.
Bone-In or Boneless: Choosing Your Format
Your choice of format depends mainly on whether you want the traditional carving experience or maximum convenience.
Bone-In Paleta Ibérica
A whole bone-in paleta lets you carve thin slices directly from the piece and enjoy Spanish jamón in its most traditional format.
Whole pieces for the U.S. market are shipped with the hoof removed. This does not affect the category or quality of the product.
Boneless Shoulder, Ready to Serve
Boneless Iberico shoulder removes the need to carve around the bone while allowing you to slice the amount you need.
It is an easy-to-handle, ready-to-serve format for anyone who wants the flavor of paleta without carving around the bone.
Frequently Asked Questions
Is Iberico Shoulder Cheaper Than Iberico Ham?
A whole Iberico shoulder generally has a lower entry price than a whole hind leg because it is a smaller piece.
Price should not be interpreted as a difference in quality. Paleta and jamón are different cuts, with different sizes, yields, curing times, flavors and textures.
How Much Usable Meat Does a Bone-In Iberico Shoulder Give You?
A paleta has a higher bone-to-meat proportion than a full hind leg, so not all of its total weight becomes slices.
Actual yield varies from piece to piece and depends on carving. If convenience and usable yield are priorities, a boneless format may be a better fit.
Why Does an Iberico Shoulder Taste More Intense Than a Whole Leg?
The shoulder has less muscle mass and a different distribution of fat, bone and lean meat.
This contributes to the more concentrated flavor commonly associated with paleta and helps distinguish it from a whole hind leg.
Do I Need a Ham Stand to Carve It?
For a whole bone-in shoulder, a stable ham stand and an appropriate carving knife are recommended. They keep the piece secure and make it easier to carve thin slices safely.
If you prefer not to use carving equipment, choose a boneless format.
How Do I Store It Once It Is Opened?
Keep it in a cool, dry place, ideally between 60 and 70°F, away from heat sources and humidity. It does not need refrigeration. Once you start carving, cover the cut face with its own fat or a cloth between servings.
Why Choose Monte Nevado?
Monte Nevado has specialized in Spanish ham since 1898. More than 125 years of family tradition have shaped the way we select, cure and follow each piece individually until it is ready.
That work has also been recognized in Spain: our 100% Iberico Bellota ham was named Best Iberico Bellota Ham at the Alimentos de España Awards in 2018, and co-winner in 2025.
Our Iberico shoulder is available in the USA in 100% Iberico Bellota and 50% Iberico Cebo: a compact format, cured piece by piece in Spain.
