  • Minimum weight 10 lb — bone-in whole shoulder, 100% Iberian breed, acorn-fed bellota
  • 32-month average curing time — the longest in the Monte Nevado USA catalog
  • Ham stand and carving knife included — pork and Mediterranean sea salt only, non-GMO, gluten-free

What is pata negra ibérico shoulder

Pata negra is the highest official classification of Spanish ibérico ham, regulated by law. It refers exclusively to ham from 100% purebred Iberian pigs that were finished on acorns during the montanera — the autumn and winter season when free-range pigs roam the dehesa oak forests of southwestern Spain, feeding almost entirely on acorns and natural pasture. The acorn diet produces a fat with an exceptionally high proportion of oleic acid — the same fatty acid found in olive oil — that gives bellota ibérico its silky texture, its ability to melt at room temperature, and its complex, deep, nutty aroma.

This piece is a paleta: the front leg of the pig, smaller than the hind leg jamón, but carrying the same breed, the same feeding standard, and the same curing philosophy. What sets it apart from every other piece in this catalog is the curing time: an average of 32 months — eight months longer than the cebo shoulder, and the longest cure of any product Monte Nevado offers in the US market. That additional time produces a depth of flavor and aromatic complexity that only extended, slow curing in natural mountain drying rooms can achieve.

Everything you need to carve — included in the box

The set includes the shoulder leg, a ham stand, and a carving knife. The stand holds the piece securely at the correct angle for slicing. The knife is long, narrow, and flexible — the right tool for thin, clean cuts that preserve the fat distribution and texture of the meat throughout the piece. No additional equipment needed. Mount, secure, and start carving.

Two ingredients: 100% Iberian pork and Mediterranean sea salt

Nothing else. No nitrates. No gluten. No allergens. No GMOs. No hormones added. The complexity of this ham comes entirely from breed purity, the acorn-feeding season, and 32 months of natural curing — not from any additive or processing shortcut. Monte Nevado has maintained this standard since 1898, and a clean label on a 100% bellota ibérico piece is the direct result of that commitment.

What the acorn-feeding season produces in the meat

During the montanera, purebred Iberian pigs can consume between 6 and 10 kg of acorns per day, building up intramuscular fat at a rate and quality that no other feeding system replicates. That fat infiltrates the muscle fiber itself — it does not sit on the surface or collect in external deposits. When the piece is sliced, that marbling is visible throughout the meat as fine, white veining. At room temperature, the fat begins to dissolve, releasing a complex aroma with notes of toasted nuts, sweet cured meat, and the clean, mineral quality of the dehesa. The finish is long and lingers well after the slice is gone.

What to expect when you open the box

The shoulder arrives ready to mount on the included stand. Each piece weighs a minimum of 10 lb and shows the characteristic deep, intense red of a long bellota cure, darker than any cebo product, with abundant soft fat marbling throughout. The fat appears almost translucent and begins to glisten immediately as it reaches room temperature. Occasional tyrosine crystals may be present — a natural sign of extended curing and an indicator of quality, not a defect.

Store the whole shoulder in a cool, dry place below 86°F (30°C). Once started, cover the cut surface with its own fat or a clean cloth to preserve freshness between servings.

How to serve your bellota ibérico shoulder

Mount the piece on the stand, secure it firmly, and slice thin against the grain using the included knife. Allow the slices to rest at room temperature for at least 20–30 minutes before serving — bellota ibérico fat is sensitive to temperature and needs adequate time to soften and express its full aromatic profile. Serve on a warm plate, never cold. Keep the accompaniments minimal: a thin slice of toasted bread, a few Marcona almonds, or nothing at all. This is the piece that carries the table on its own. Pair with an aged Rioja Reserva or Gran Reserva, a fino or amontillado sherry, or a vintage cava. Avoid strong competing flavors — the ham’s own complexity is the point.
