How we cure our ham

At Monte Nevado, quality and sustainability go hand in hand. Every Monte Nevado ham is cured individually, piece by piece, following the characteristics of each leg rather than a fixed batch.

From the origin of the raw material to the final stages of curing, every step matters when producing ham with the flavor, texture and consistency we expect from Monte Nevado.
